At first glance, it doesn’t really look like a sake brewery. It’s stylish and really cool.

A “handcrafted brewery” to be proud of in the future
It was created as a brewery that carries forward the skills and spirit of Ozeki’s toji master brewers to the next generation, and also as a place for creating new sake for the future, shaping both the tradition and future of Japanese sake.

The theme is “harmony between people, rice, and water.”
Apparently, employees took part from the building’s design stage, making it a brewery where visitors can experience the origins of Japanese sake.
Why did they build a new brewery?
The sake industry is facing issues such as the aging of toji master brewers, a shortage of next-generation talent, and younger generations moving away from sake.

Against that backdrop, Ozeki came up with the idea of creating a small brewery, or microbrewery, as a place to make sake in ways that mass production can’t, and to bring fresh creativity into sake.
About 10 years after the idea was first conceived, it has finally opened!
The building is unconventional too!
So that visitors can watch the sake-making process, the brewing area is enclosed in glass. Apparently, that’s very rare.

Since it was created around the theme of “visible brewing,” it looks like visitors will be able to see the whole process of how sake is made at a glance.
Finally
魁蔵 is scheduled to begin full-scale operations in January 2026, and the first sake brewed there is expected to be unveiled as a new brand at the brewery opening event in March. The brewery opening draws big crowds every year, but next year looks like it’ll be even more exciting. Shachomi definitely has to go check this out too🍶
