I tried the “Yaki Tobiuo (Ago) Soba” at the ramen shop “だしと麺” in Yamaguchi-cho along Route 176 (*^^)v
Every time I pass by this place on a Sunday, the parking lot is always full and there’s a line, so I’d been curious about it!!
The ramen I ate at “だしと麺”
“Yaki Tobiuo (Ago) Soba with Seasoned Egg” The highlight of this shop is its natural dashi broth made without chemical seasonings!
The soup is clear, but it’s packed with richness and umami. You can easily drink it all up! And as expected from natural dashi, I didn’t get thirsty afterward.
The toppings were:
Coarsely chopped onion (maybe in place of green onions? It went perfectly with the chashu).
Mizuna (the crisp texture added a nice accent).
Chashu (even though it was pork shoulder loin, it was so moist, tender, and juicy that I almost thought it was roast beef (*^^)v A texture I’d never had before! I want to eat it again!).
Seasoned egg (a fantastic ajitama! The flavor had soaked right into the yolk too).
The noodles are slightly thick house-made noodles (they seem to use whole wheat flour).
You can enjoy their chewy texture (*^^)v
It really was delicious enough to drink every last drop without getting thirsty afterward!!!

The inner courtyard has the feel of a Japanese garden.
Orders are placed on a tablet! There were all kinds of seasonings on the table.

I often pass by on Sundays, and it’s always packed with a full parking lot and a line… so this time I went right at 12:00 on a weekday. The parking lot was almost full! The inside was almost full too!
All the staff were refreshingly energetic.
This time I had one of their classics, but since the menu is extensive, it feels like you could enjoy a different flavor again and again(^^♪
